Sean Henninger, who owned Times Square Pizza / Atomic Chocolate in Walker's Point, opened Redbar's kitchen and developed the menu. This was unexpected for Henninger, who was scouting locations to reopen his pizza and chocolate place when co-owner Carrie Wisniewski offered him the chance to create food for Redbar.

In 2002, Mitchell Wakefield opened Tess with a business partner, 2499 N. Bartlett Ave. Today, Wakefield owns the restaurant with his wife, Ashley. Inspired by a friend with Celiac disease, Wakefield developed a menu at Tess that is 75 percent gluten-free.

There are two approaches to writing a menu that corresponds to an art exhibit at the Milwaukee Art Museum: creating food that looks like the art, or reflecting the historical context of the art within the food. According to Micah Kaufman, executive chef at CafĂ© Calatrava, the menu for the new MAM exhibit, "Kandinsky: A Retrospective," is some of both.
