There are certain recipes that still sound delicious no matter how sophisticated your sense of taste becomes. Take taco dip, for example. The spicy, creamy potluck favorite is on the "guilty pleasures" list of some of the finest chefs I know.
This recipe for Tater Tot casserole is another one of those classic, Americana dishes that isn't healthy or gourmet, but if I whipped up a batch of it right now, you'd probably grab a fork and start eating it straight from the pan.
Because the Tater Tot is one of my most-craved foods, I have made many tater tot casseroles, but this simple guy remains my favorite. It's comfort food's finest hour.
Ingredients:
1 32-oz. package frozen potato rounds
1 16-oz. container sour cream
1 cup shredded cheddar cheese
1 can condensed cream of mushroom soup
1 small can French-fried onions
Instructions:
Preheat oven to 350 degrees. Grease a 9x13 inch-baking dish. Arrange tater tots in the prepared baking dish. In a mixing bowl, combine sour cream, cheese and mushroom soup. Pour over the top. Sprinkle with fried onions and bake until onions are crispy and brownish.

Try frying up some fresh mushrooms and 1/2 an onion. Add it to the mixture when pooring it over the tater tots. I had this at my shower and it was delightful. The rest of the receipe stays the same.

ours was similar to the recipe here, but we saved the cheddar for the top, and omitted the fried onions.

Molly-do you serve your casserole as a sidedish or main dish? That would make the difference for me w/ the meat. I serve it as a main dish so maybe that's why I think it sounds weird. But I'm willing to try this out next time I'm craving the casserole! Thanks! :)

Meat Rules. Browned ground beef on the bottom, can of cream soup, greenbeans, tots and cheese. Bake. Open a Leinie's and enjoy !

I strongly disagree about using meat in tot casserole. I am not a vegetarian, but I think the meat overpowers the dish. Also, by pouring the mixture on top, it soaks in between the tater tots during the baking process, "cementing" the tots together.
