Gilles Frozen Custard Drive In

Steeped in history, Gilles is Milwaukee's oldest custard stand (it's been around since 1938). It's come along way since, considering there were only three things on the menu at its inception -- hot dogs, root beer and vanilla custard. Thankfully, the menu has expanded to include a rotating custard flavor of the day, custard and soda floats, shakes, malts and sundaes. Gilles even delivers, too, but that would obliterate any chance of seeing Bud Selig, who is a frequent, and long-time, Gilles customer.

(And for the record: custard is a "dessert made of eggs, sugar and milk that is baked boiled or frozen," ice cream is "a frozen food containing cream or milk and butterfat, sugar, flavoring and sometimes eggs," and yogurt "is a custard-like food with a tart flavor, prepared from milk curdled by bacteria." This is an old school Milwaukee favorite. Although there is no longer service to your car, you can still order and enjoy your custard treats in the car, just like the golden days. They also do traditional burgers, jumbo onion rings and have a fish fry.

Kopp's -- a Milwaukee staple -- is always a top of the list for those in need of custard. Mainstays chocolate and vanilla are supplemented by two different flavors each day, some as familiar as Rocky Road and Chocolate Chip Cookie Dough and some as unfamiliar as Spumoni (a mixture of pistachio nut, burgundy cherry and chocolate almond custards) and Turtle Sundae (caramel custard with chocolate and cameral swirls, topped with pecans). Incidentally, back in 2005, Kopp's was the winner of OMC "Milwaukee Challenge" for having the best custard in town.

There is more than one distributor of custard in the Milwaukee area, there is however, one big one that serves a lot of the custard places. It is NOT the same in it's pre-frozen state, there are many variations in recipe, fat content, ingrediants, and flavor. The machines have a lot to do with texture and consistency.

Actually, there is one distributor of custard in the Milwaukee area. The same one that sells to Culver's is the same one that sells to BJ. It is identical in its pre-frozen form. The main difference is the machine that produces the custard. With new technology, and custard being so prone to bacteria growth, the new advanced machines like the one that the burger joint has keeps the bacteria levels low, and will automatically shut down if not cleaned properly. So....Before you decide to be critical of a machine that is the price of a nice car, and a machine that keeps you healthy, please be educated before you speak.

Kehr's in the Milwaukee Public Market makes some great ice cream. Many flavors infused with brandy. Yum! Bean's and Barley also now has ice cream. How much longer before a Ben and Jerry's finds its way to Cream City?

You also forgot Golden Gyro's on 73rd and Lincoln. It's a great little burger/gyro/custard stand that serves really good food (burgers that almost rival Kopps) and great custard. They don't skimp on their mix-ins either. Very friendly staff too. My only complaint is they only take cash, but it's so good I usually raid the change jar at my house to get some custard!
